  • 2 tablespoons Extra-virgin olive oil
  • 1 medium Medium yellow onion, finely diced
  • 2 medium Medium carrots, diced
  • 2 stalks Celery stalks, diced
  • 4 cloves Garlic cloves, minced
  • 1 teaspoon Dried Italian seasoning
  • 1/2 teaspoon Red-pepper flakes, optional
  • 28 ounces Diced or crushed tomatoes
  • 4 cups Low-sodium chicken or vegetable broth
  • 3 15-ounce cans Cannellini beans, drained and rinsed
  • 1 rind Parmesan rind, optional
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Freshly ground black pepper
  • 3 cups Chopped Tuscan kale or baby spinach
Finishing Ingredients
  • 1 tablespoon Lemon juice or red-wine vinegar
  • 2 tablespoons Fresh parsley, chopped, optional
  • as needed for serving Grated Parmesan
Optional Additions
  • 4 ounces Diced pancetta or mild Italian sausage
  • 1 small Small zucchini, diced
  • 1/2 cup Small pasta, such as ditalini

Method
 

Step-by-Step
  1. Warm the olive oil in a large Dutch oven or soup pot over medium heat. Add the onion, carrots, and celery, then cook for 7–9 minutes, stirring occasionally, until the vegetables soften.
  2. Add the minced garlic, Italian seasoning, and optional red-pepper flakes. Cook for 30–60 seconds, stirring constantly, just until the garlic is fragrant.
  3. Stir in the tomatoes, broth, drained beans, Parmesan rind, kosher salt, and black pepper. Bring the mixture to a boil.
  4. Reduce the heat and simmer the soup uncovered for 20–25 minutes. Stir occasionally so the beans and vegetables cook evenly and the flavors have time to come together.
  5. For a thicker texture, mash about 1 cup of the beans against the side of the pot, or carefully blend 1–2 cups of soup and return it to the pot. This creates a creamy body without adding flour or cream.
  6. Stir in the chopped kale and cook for 3–5 minutes, until tender. If using baby spinach instead, cook it for only 1–2 minutes.
  7. Remove the Parmesan rind from the pot. Stir in the lemon juice or red-wine vinegar, taste the soup, and adjust the salt and pepper as needed.
  8. Ladle the soup into bowls and finish with chopped parsley, grated Parmesan, and a small drizzle of olive oil. Serve immediately with crusty bread.

Notes

For optional pancetta or sausage, brown it in the pot before cooking the onion, carrots, and celery. Add diced zucchini with the broth and beans. If using 1/2 cup small pasta, add it with the broth and cook according to the package directions. Store leftovers in the refrigerator and reheat gently; add a splash of broth if the soup thickens.
