Hearty Beef and Gnocchi Soup

A comforting one-pot soup featuring browned ground beef, tender vegetables, tomato-rich broth, potato gnocchi, and baby spinach. Heavy cream may be added for a creamy finish.

  • 1 tablespoon Olive oil
  • 1 pound Lean ground beef, preferably 85–90% lean
  • 1 Medium yellow onion, diced
  • 2 Medium carrots, peeled and diced
  • 2 Celery ribs, diced
  • 3 Garlic cloves, minced
Seasonings and Broth
  • 2 tablespoons Tomato paste
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon Kosher salt, plus more to taste
  • 1/4 teaspoon Black pepper, plus more to taste
  • 6 cups Beef broth or stock
  • 1 14–15 ounce can Diced tomatoes with juices
  • 1 tablespoon Worcestershire sauce
Finishing Ingredients
  • 1 16-ounce package Refrigerated or shelf-stable potato gnocchi
  • 2 cups Loosely packed baby spinach
  • 1/2 cup Heavy cream, optional
  • As needed Grated Parmesan
  • As needed Chopped fresh parsley, optional

Method
 

Step-by-Step
  1. Heat the olive oil in a large Dutch oven or soup pot over medium-high heat. Add the ground beef and cook for 6–8 minutes, breaking it apart as it browns; drain excess fat if necessary.
  2. Add the diced onion, carrots, and celery. Cook for about 5 minutes, stirring occasionally, until the vegetables begin to soften.
  3. Stir in the garlic, tomato paste, Italian seasoning, kosher salt, and black pepper. Cook for 1 minute, stirring constantly, until fragrant and the tomato paste darkens slightly.
  4. Pour in the beef broth and diced tomatoes with their juices. Stir in the Worcestershire sauce and scrape the browned bits from the bottom of the pot.
  5. Bring the soup to a boil, then reduce the heat and simmer uncovered for 12–15 minutes, or until the carrots are nearly tender.
  6. Add the gnocchi and simmer according to the package directions, usually 3–5 minutes. The gnocchi are ready when they float and feel tender.
  7. Stir in the baby spinach and cook for 1–2 minutes until wilted. For a creamy version, reduce the heat to low and stir in the heavy cream without allowing the soup to boil vigorously.
  8. Taste the soup and adjust the salt and pepper. Serve hot with grated Parmesan and optional chopped fresh parsley.

Notes

Brown the beef thoroughly for deeper flavor, and add the gnocchi near the end so they do not become overly soft. Store gnocchi separately when possible, or add extra broth when reheating because gnocchi continue absorbing liquid in the refrigerator.
