Healthy Tuna Pasta Salad Recipe

A fresh and filling tuna pasta salad made with whole-wheat fusilli, colorful vegetables, and a creamy Greek yogurt, lemon, and Dijon dressing. This recipe makes 4 servings and can be served right away or chilled for about 30 minutes.

  • 250 g Whole-wheat fusilli or other short pasta
  • 2 cans, about 220-240 g drained total Tuna in spring water, drained
  • 200 g Cherry tomatoes, halved
  • 1 Medium cucumber, diced
  • 1/2 Small red onion, finely sliced or diced
  • 100 g Canned sweetcorn, drained
  • 2 tablespoons Fresh parsley, chopped
  • As needed Salt for pasta water
Yogurt Dressing
  • 150 g Plain Greek yogurt
  • 1 tablespoon Extra-virgin olive oil
  • 1 tablespoon Fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 Small garlic clove, finely grated or minced
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Freshly ground black pepper

Method
 

Step-by-Step
  1. Cook the whole-wheat pasta in well-salted boiling water according to the package directions, usually for 10–12 minutes, until just tender. Drain thoroughly, rinse briefly under cold water to stop the cooking, and allow the pasta to drain well.
  2. Whisk the Greek yogurt, olive oil, lemon juice, Dijon mustard, garlic, salt, and black pepper together in a small bowl until smooth and evenly combined.
  3. Place the cooled pasta in a large mixing bowl. Add the drained tuna, halved cherry tomatoes, diced cucumber, red onion, sweetcorn, and chopped parsley.
  4. Pour the dressing over the pasta mixture and toss gently until the ingredients are evenly coated. Taste and adjust the seasoning as needed.
  5. Serve immediately, or refrigerate the salad for about 30 minutes if time allows. If preparing it ahead, reserve one or two tablespoons of dressing and stir it through just before serving.

Notes

Do not overcook the pasta, since slightly firm pasta holds its shape better after dressing and chilling. Drain the pasta thoroughly so excess water does not dilute the dressing. Store covered in the refrigerator and refresh with reserved dressing before serving.
