Chicken
  • 1 pound Boneless, skinless chicken breasts or thighs
  • 1 tablespoon Olive oil
  • 1 teaspoon Chili powder
  • 1 teaspoon Ground cumin
  • 1/2 teaspoon Smoked paprika or regular paprika
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Black pepper
  • 1 tablespoon Fresh lime juice
Salad
  • 6 cups Chopped romaine lettuce
  • 1 cup Canned black beans, drained and rinsed
  • 1 cup Corn kernels
  • 1 cup Halved cherry tomatoes
  • 1/2 cup Diced red bell pepper
  • 1/4 cup Finely diced red onion
  • 1/4 cup Chopped fresh cilantro
  • 1 Avocado, diced
  • 1/4 cup Shredded Monterey Jack or cheddar cheese, optional
Healthy Southwest Dressing
  • 1/2 cup Plain Greek yogurt
  • 2 tablespoons Fresh lime juice
  • 1 tablespoon Olive oil
  • 1 tablespoon Salsa or adobo sauce
  • 1 teaspoon Honey or maple syrup
  • 1/2 teaspoon Chili powder
  • 1/4 teaspoon Ground cumin
  • 1 Small garlic clove, grated or minced
  • 2-3 tablespoons Water
  • To taste Salt and black pepper

Method
 

Step-by-Step
  1. Pat the chicken dry. Stir together olive oil, chili powder, cumin, paprika, garlic powder, kosher salt, black pepper, and lime juice, then rub the mixture evenly over the chicken.
  2. Heat a skillet or grill pan over medium-high heat. Cook chicken breasts for approximately 5–7 minutes per side, depending on thickness, or cook thighs slightly longer, until the thickest part reaches 165°F (74°C).
  3. Transfer the cooked chicken to a cutting board and let it rest for 5 minutes. Slice or chop it after resting so the juices stay inside the meat.
  4. Whisk Greek yogurt, lime juice, olive oil, salsa or adobo sauce, honey or maple syrup, chili powder, cumin, garlic, salt, and pepper. Add water gradually until the dressing is smooth and pourable.
  5. Add romaine, black beans, corn, cherry tomatoes, bell pepper, red onion, and cilantro to a large bowl. Toss with part of the dressing until the vegetables are lightly coated.
  6. Top the salad with sliced chicken, diced avocado, and optional shredded Monterey Jack or cheddar cheese. Serve with the remaining dressing and extra lime wedges.

Notes

Rinse canned black beans thoroughly and drain canned corn well to prevent a watery salad. Add avocado immediately before serving, and store salad components separately when preparing ahead. For deeper flavor, season the chicken 20–30 minutes before cooking and use fresh lime juice.
