Step-by-Step
- Dice the tomatoes and onion into small, evenly sized pieces. For a less watery salsa, seed the tomatoes or drain away some of their excess juice before adding them to the bowl.
- Mince the jalapeno and garlic. Remove the jalapeno seeds and ribs if you prefer a milder salsa, or leave some in for extra heat.
- Combine the tomatoes, onion, jalapeno, garlic, cilantro, lime juice, and kosher salt in a bowl. Add the optional pinch of cumin if you enjoy a subtle earthy note.
- Stir gently until the ingredients are evenly mixed, taking care not to crush the tomatoes. Taste and adjust the salt, lime juice, or jalapeno according to your preference.
- Let the salsa rest for 15–30 minutes before serving so the flavors can blend. Serve chilled or at room temperature.
Notes
Roma tomatoes are especially useful when you want a thicker salsa because they contain less moisture. The salsa can be made several hours ahead; add or adjust the cilantro and lime near serving for the freshest flavor. Refrigerate leftovers in a covered container and use within about 2–3 days.
