Ingredients

Main Ingredients
  • 1 cup Pure pumpkin purée, canned or homemade
  • 1 cup Plain or vanilla Greek yogurt
  • 1/2 cup Unsweetened milk, almond milk, or oat milk
  • 1/4 cup Pure maple syrup
  • 1 teaspoon Pumpkin pie spice
  • 1 teaspoon Vanilla extract
  • 1 pinch Fine salt

Method

Step-by-Step
  1. Add the pumpkin purée, Greek yogurt, milk, maple syrup, pumpkin pie spice, vanilla extract, and salt to a blender or food processor.
  2. Blend until the mixture is completely smooth and evenly combined. Taste and add a little more maple syrup or pumpkin pie spice if desired.
  3. Pour the blended mixture into six standard popsicle molds, leaving a small amount of space at the top for expansion. Insert the sticks.
  4. Freeze the popsicles for at least 4–6 hours, or until solid. For the firmest texture and easiest planning, freeze them preferably overnight.
  5. To unmold, briefly run the outside of each mold under warm water, then gently pull out the popsicle. Avoid forcing the stick or twisting the mold aggressively.

Notes

Use pure pumpkin purée, not pumpkin pie filling. Greek yogurt creates a thicker, creamier texture; regular yogurt makes a softer mixture and may need less milk. For a less sweet version, use 2–3 tablespoons of maple syrup. If using vanilla yogurt, reduce the added maple syrup accordingly.
