Healthy Pumpkin Soup

  • 1 tablespoon Extra-virgin olive oil
  • 1 about 1 1/2 cups Medium yellow onion, diced
  • 3–4 cloves Garlic, minced
  • 1 teaspoon Ground cumin
  • 1/2 teaspoon Smoked paprika
  • 1/2 teaspoon Ground coriander
  • 1/4 teaspoon Ground cinnamon
  • 1 pinch, optional Cayenne pepper
  • 15 ounces Plain pumpkin purée
  • 4 cups Low-sodium vegetable broth or chicken broth
  • 1/2 cup Unsweetened coconut milk or half-and-half
  • 1 tablespoon, optional Pure maple syrup
  • 1/2 teaspoon, plus more to taste Kosher salt
  • 1/4 teaspoon, plus more to taste Freshly ground black pepper
Optional Garnishes
  • As desired Toasted pumpkin seeds, coconut milk or cream, chopped parsley, cilantro or sage, plain Greek yogurt, and crusty whole-grain bread

Step-by-Step
  1. Heat the olive oil in a large soup pot over medium heat. Add the diced onion and cook for 5–7 minutes, stirring occasionally, until soft and translucent.
  2. Add the minced garlic, cumin, smoked paprika, coriander, cinnamon, and optional cayenne. Stir for about 30 seconds, just until the spices and garlic become fragrant.
  3. Stir in the pumpkin purée and broth. Bring the mixture to a gentle boil, then reduce the heat, partially cover the pot, and simmer for 20–25 minutes.
  4. Blend the soup until completely smooth with an immersion blender. If using a countertop blender, work in batches, leave room for steam to escape, and hold the lid in place with a folded kitchen towel.
  5. Stir in the coconut milk or half-and-half and add the maple syrup if desired. Season with the kosher salt and black pepper, then warm gently for another 2–3 minutes without boiling.
  6. Ladle the soup into four bowls and top with toasted pepitas, herbs, Greek yogurt, or a small swirl of coconut milk or cream. Serve with crusty whole-grain bread if desired.

Notes

Use plain pumpkin purée, not pumpkin pie filling. Blend hot soup carefully, especially in a countertop blender. Store cooled leftovers in an airtight container in the refrigerator and reheat gently without boiling.
