- Heat the oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners or lightly grease each cup.
- Add the pumpkin puree, eggs, maple syrup, almond butter, and vanilla to a blender or food processor. Blend until smooth.
- Add the rolled oats, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt. Blend or pulse just until the oats are broken down and the batter is combined; do not overprocess.
- Fold in the mini chocolate chips if using, distributing them gently through the batter.
- Divide the batter evenly among the muffin cups, filling each approximately three-quarters full.
- Bake for 20 to 25 minutes, until the tops are set and a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Cool the muffins in the pan for about 5 minutes, then transfer them to a rack to finish cooling.
Notes
Use plain pumpkin puree rather than pumpkin pie mix. Oat-based muffins firm up as they cool, so let them cool before eating. For a stronger oat texture, pulse the oats briefly rather than blending them completely smooth. Certified gluten-free oats can be used when needed.
