- Heat the oven to 375°F (190°C). Grease a 12-cup muffin pan or line it with paper liners.
- In a large bowl, combine the quick-cooking oats, whole-wheat flour, brown sugar, baking powder, baking soda, salt, and cinnamon.
- In a separate bowl, whisk the egg, mashed banana, and unsweetened applesauce until blended.
- Add the wet ingredients to the dry ingredients and stir just until the flour is moistened. Do not overmix.
- Fold in the finely chopped apple.
- Divide the batter evenly among the muffin cups, filling each about two-thirds to three-quarters full.
