Method
 

Step-by-Step
  1. Heat the oven to 375°F (190°C). Grease a 12-cup muffin pan or line it with paper liners.
  2. In a large bowl, combine the quick-cooking oats, whole-wheat flour, brown sugar, baking powder, baking soda, salt, and cinnamon.
  3. In a separate bowl, whisk the egg, mashed banana, and unsweetened applesauce until blended.
  4. Add the wet ingredients to the dry ingredients and stir just until the flour is moistened. Do not overmix.
  5. Fold in the finely chopped apple.
  6. Divide the batter evenly among the muffin cups, filling each about two-thirds to three-quarters full.
  7. Bake for 20 to 25 minutes, or until the tops are set and a toothpick inserted in the center comes out clean.
  8. Cool the muffins in the pan for about 5 minutes, then transfer them to a rack to finish cooling.

Notes

Use very ripe bananas for the best sweetness and moisture. For taller muffins, let the batter rest for 5 to 10 minutes before baking so the oats can hydrate. Store cooled muffins in an airtight container and avoid overmixing to prevent a dense texture.
