  • 2 mangoes, about 2 cups Ripe but firm mangoes, peeled and diced
  • 1 pepper, about 1 cup Medium red bell pepper, seeded and finely diced
  • 1/4 cup Red onion, finely diced
  • 1 jalapeño Jalapeño, seeded and minced
  • 1/4 cup Fresh cilantro, chopped
  • 2 tablespoons Fresh lime juice
  • 1/4 teaspoon Kosher salt, plus more to taste

Method
 

Step-by-Step
  1. Peel the mangoes, cut the flesh away from the pits, and dice the fruit into small, even pieces.
  2. Finely dice the red bell pepper and red onion. Seed and mince the jalapeño, and chop the fresh cilantro.
  3. Combine the mango, red bell pepper, red onion, jalapeño, and cilantro in a bowl.
  4. Add the lime juice and kosher salt, then fold gently so the mango pieces remain intact.
  5. Taste and adjust the lime juice, salt, and jalapeño according to your preference.
  6. Serve immediately, or refrigerate for 15–30 minutes before serving to allow the flavors to blend.

Notes

Choose mangoes that yield slightly to gentle pressure but are still firm enough to dice cleanly. Add jalapeño gradually because heat levels vary. If the salsa rests before serving, taste once more and adjust the salt and lime immediately before serving.
