Healthy Homemade Strawberry-Apple Ice Pops

Fresh strawberries and unsweetened apple juice create naturally sweet, dairy-free ice pops with a bright lemony finish. Add a small sweet apple for a stronger fresh-apple flavor, or keep the base simple with strawberries and juice.

Ingredients
  

Fruit Base
  • 2 cups Fresh strawberries, hulled
  • 1 cup Unsweetened apple juice
  • 1 tablespoon Fresh lemon juice
Optional Additions
  • 1 small Small sweet apple, peeled, cored, and chopped
  • 1-2 teaspoons Honey or pure maple syrup

Method
 

Step-by-Step
  1. Wash and hull the strawberries. If using the optional apple, peel, core, and chop it into small pieces.
  2. Add the strawberries, apple juice, lemon juice, optional apple pieces, and optional sweetener to a blender. Blend until completely smooth.
  3. Taste the blended mixture before filling the molds. Add the optional honey or maple syrup only if the fruit tastes tart.
  4. Pour the mixture into ice-pop molds, leaving about 1/4 inch of headspace because the liquid expands as it freezes. Insert the sticks.
  5. Freeze the molds for at least 4 hours, preferably overnight, or until the pops are completely solid.
  6. To release a pop, briefly run the outside of its mold under warm water. Gently pull the stick upward without forcing it.

Notes

Use very ripe strawberries and unsweetened apple juice for the best flavor. Strain the blended mixture for an especially smooth texture, or leave it unstrained for more fiber and a slightly pulpy homemade texture. Omit honey and maple syrup for children under 12 months.
