Healthy Fruit and Nut Flapjacks

Soft and chewy banana flapjacks made with peanut butter, oats, dried fruit, and chopped nuts or seeds. This easy recipe yields 12 naturally sweet snack bars.

  • 3 large about 300g peeled weight Very ripe bananas, mashed
  • 100 g Smooth or crunchy peanut butter
  • 2 tbsp, about 40g Honey
  • 1 tsp Vanilla extract
  • 200 g Porridge oats or rolled oats
  • 100 g Dried fruit
  • 50 g Chopped nuts or mixed seeds
  • 1 pinch Salt
Optional
  • 1/2 tsp Ground cinnamon

Method
 

Step-by-Step
  1. Heat the oven to 180°C conventional, 160°C fan, or gas mark 4. Line a 20cm square baking tin with baking parchment.
  2. Mash the bananas thoroughly in a large mixing bowl until mostly smooth.
  3. Stir in the peanut butter, honey, and vanilla extract until well combined.
  4. Add the oats, dried fruit, chopped nuts or seeds, salt, and optional cinnamon. Mix until every ingredient is evenly distributed.
  5. Press the mixture firmly and evenly into the prepared tin, compacting it well so the finished flapjacks hold together.
  6. Bake for 20–25 minutes, until the edges are lightly golden and the centre looks set.
  7. Leave the flapjacks to cool completely in the tin before cutting into 12 squares or bars.

Notes

Use very ripe, spotty bananas for the best sweetness and moisture. These flapjacks are softer and chewier than traditional butter-and-syrup flapjacks. Store in an airtight container for up to 3 days, refrigerate for a firmer texture, or freeze individually for about 1 month. For a nut-free version, use sunflower-seed butter and seeds instead of chopped nuts.
