Thinly sliced beef and crisp-tender broccoli come together in a light, glossy garlic-ginger sauce. This quick stir-fry makes four servings and is ready in about 30–35 minutes.

  • 1 lb (450 g) Flank steak or sirloin, thinly sliced against the grain
  • 1 large head, about 1 lb (450 g) Broccoli, cut into bite-size florets
  • 1 tablespoon Neutral cooking oil, such as avocado, canola, or vegetable oil
Aromatics
  • 3 cloves Garlic, minced
  • 1 tablespoon Fresh ginger, finely grated
Sauce
  • 1/2 cup (120 ml) Low-sodium beef broth
  • 2 tablespoons Reduced-sodium soy sauce
  • 1 tablespoon Oyster sauce
  • 1 teaspoon Honey or brown sugar
  • 1 tablespoon Cornstarch
  • 1 teaspoon Toasted sesame oil
  • 1/4 teaspoon Freshly ground black pepper
For Serving
  • as needed Cooked brown rice or white rice
Optional Garnishes
  • as desired Sliced scallions, sesame seeds, or red-pepper flakes

Method
 

Step-by-Step
  1. Chill the steak in the freezer for 15–20 minutes if needed, then slice it thinly against the grain.
  2. Whisk the beef broth, reduced-sodium soy sauce, oyster sauce, honey or brown sugar, cornstarch, toasted sesame oil, and black pepper in a bowl.
  3. Heat half the neutral oil in a large wok or skillet over medium-high to high heat. Sear the beef in a single layer for about 1–2 minutes per side, working in batches if necessary, then transfer it to a plate.
  4. Add the remaining oil and stir-fry the broccoli for 3–4 minutes. Add 2 tablespoons of water, cover briefly, and steam for another 1–2 minutes until bright green and crisp-tender.
  5. Add the garlic and ginger and cook for about 30 seconds.
  6. Return the beef to the pan, pour in the sauce, and stir continuously for 1–2 minutes until the sauce boils, thickens, and coats the beef and broccoli.
  7. Serve immediately over cooked rice and finish with optional scallions, sesame seeds, or red-pepper flakes.

Notes

For tender beef, slice against the grain and avoid overcrowding the pan. Mix the cornstarch into the cold sauce before adding it to the hot skillet to prevent lumps. Refrigerate leftovers promptly and reheat gently until hot.
