Oatmeal
  • ½ cup Old-fashioned rolled oats
  • 1 cup Milk or unsweetened almond milk
  • ½ banana Large ripe banana, mashed
  • ¼ teaspoon Ground cinnamon
  • 1 small pinch Salt
  • 1 tablespoon Chopped walnuts or pecans
  • ½ teaspoon Vanilla extract, optional
  • 1 teaspoon Maple syrup or honey, optional
Toppings
  • ½ banana Remaining banana, sliced
  • 1 tablespoon Additional chopped walnuts or pecans
  • As desired Extra cinnamon, optional

Method
 

Step-by-Step
  1. Mash half of the banana directly in a small saucepan. Add the rolled oats, milk or unsweetened almond milk, cinnamon, and salt, then stir to combine.
  2. Bring the mixture to a gentle simmer over medium heat. Cook for about 4–5 minutes, stirring frequently, until the oats are soft and creamy.
  3. Remove the saucepan from the heat and stir in the vanilla extract, if using. Transfer the oatmeal to a bowl and add the sliced banana and additional chopped nuts.
  4. Taste before adding sweetener. If the oatmeal needs more sweetness, drizzle with up to 1 teaspoon maple syrup or honey and finish with extra cinnamon if desired.

Notes

Stir often near the end because banana and milk can scorch easily. If the oatmeal becomes too thick, loosen it with 1–2 tablespoons of additional milk. For the microwave method, combine the oats, milk, mashed banana, cinnamon, and salt in a large microwave-safe bowl; microwave on high for about 2–3 minutes, stirring once halfway through, then let stand for 1 minute before adding the nuts and toppings.
