- Heat the oven to 350°F (175°C) and lightly grease a shallow roasting pan or baking dish.
- In a large bowl, combine the ground fully cooked ham, ground pork, lightly beaten eggs, milk, and cracker crumbs. Mix only until the ingredients are evenly combined.
- Divide the mixture in half and shape each portion into a loaf. Place both loaves in the prepared shallow pan, leaving a little room between them.
- Bake the loaves uncovered for 30 minutes.
- While the loaves begin baking, combine the packed brown sugar, vinegar, water, and prepared yellow mustard. Stir until the glaze is blended.
- Pour the glaze over the partially baked loaves. Continue baking for about 30 minutes, spooning or basting the glaze over the loaves several times.
- Check that the centers are fully cooked and that the ground pork reaches at least 160°F internally. Let the loaves rest briefly before slicing.
Notes
Use finely ground or finely chopped ham and avoid overmixing, which can make the loaves dense. A shallow roasting pan helps the glaze reduce around the loaves, while frequent basting creates a more even sweet-tart coating.
