- Place the eggs in a saucepan and cover them with cold water by about 1 inch. Bring the water to a boil, cover the pan, remove it from the heat, and let the eggs stand for 10–12 minutes.
- Transfer the cooked eggs immediately to an ice bath. Cool them for at least 5 minutes, then peel carefully.
- Slice the eggs lengthwise and remove the yolks. Place the yolks in a medium bowl.
- Halve the avocado, remove the pit, and scoop the flesh into the bowl with the yolks. Add lime juice, red onion, cilantro, optional jalapeño, cumin, kosher salt, and black pepper.
- Mash the mixture with a fork until mostly smooth but still slightly textured. Fold in the tomato if using, then taste and adjust the lime juice, salt, or jalapeño.
- Spoon or pipe the guacamole mixture into the egg-white halves. Finish with paprika, cilantro, or a small piece of tomato, then serve immediately or refrigerate briefly.
Notes
Use fresh lime juice and fill the eggs shortly before serving because avocado darkens when exposed to air. If preparing ahead, cover the surface of the filling directly with plastic wrap and refrigerate. An ice bath helps the eggs peel more easily and helps prevent a gray-green ring around the yolks.
