Grilled Lemon Butter Zucchini

Tender grilled zucchini is finished with a fresh lemon-garlic butter for a quick, flavorful side dish. The recipe serves four and takes about 20 minutes from start to finish.

Ingredients
  

Lemon Butter
  • 4 tablespoons Unsalted butter, softened or melted
  • 1 tablespoon Fresh lemon juice
  • 1 teaspoon Finely grated lemon zest
  • 1 clove Garlic, minced or finely grated
  • 1/2 teaspoon, plus more to taste Kosher salt
  • 1/4 teaspoon Freshly ground black pepper
  • 1-2 tablespoons, optional Fresh parsley, chopped
Zucchini and Grill
  • 4 zucchini Medium zucchini, about 2 pounds total
  • 1 tablespoon Olive oil, for zucchini and grill grates

Method
 

Step-by-Step
  1. Heat a gas or charcoal grill to medium-high, approximately 400–450°F. Make sure the grates are clean, then lightly oil them to help the zucchini release easily.
  2. Wash and dry the zucchini thoroughly. Trim the ends and cut each zucchini lengthwise in half; very large zucchini may be quartered lengthwise.
  3. Stir together the softened or melted butter, lemon juice, lemon zest, garlic, kosher salt, black pepper, and parsley if using. Keep the mixture ready so it can be brushed over the hot zucchini immediately after grilling.
  4. Lightly brush the zucchini with olive oil, concentrating on the cut sides. Place the pieces cut-side down on the hot grill without crowding them.
  5. Grill for 4–5 minutes without moving the zucchini much, until deep grill marks form. Turn the pieces and grill for another 3–5 minutes, until tender but not soft or collapsing.
  6. Brush the hot zucchini generously with the lemon butter as soon as it comes off the grill. Serve immediately, spooning any remaining butter over the top.

Notes

Choose small-to-medium, firm zucchini because they contain less water and hold their shape better. Add most of the lemon butter after grilling because butter can burn over high heat, and finishing off the grill keeps the lemon flavor fresh.
