- Heat the oven to 400°F. Arrange the prosciutto in a single layer on a parchment-lined baking sheet.
- Bake the prosciutto for approximately 8–10 minutes, turning once, until browned and crisp. Drain it on paper towels, then break each slice into smaller pieces.
- Mix the fig preserves with the Dijon mustard in a small bowl until evenly combined.
- Butter one side of each bread slice. Spread the fig-mustard mixture on the unbuttered sides.
- Place Gouda and pieces of crisp prosciutto between the bread slices, keeping the buttered sides facing outward.
- Grill the sandwiches in a skillet, griddle, or panini press over medium to medium-low heat for about 3–4 minutes per side, or until the bread is golden brown and the Gouda has melted.
- Rest the sandwiches briefly, then cut each one into quarters or small triangles. Serve warm.
Notes
Crisp the prosciutto separately so it stays pleasantly crunchy inside the sandwiches. Use medium-low heat to brown the bread gradually while the Gouda melts. Mild or smoked Gouda both work well; smoked Gouda gives the appetizers a stronger grilled flavor.
