- Heat the oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners or grease it lightly.
- Whisk the flour, baking soda, salt, and optional cinnamon together in a medium bowl.
- In a separate bowl, whisk the mashed bananas, Greek yogurt, brown sugar, melted slightly cooled butter, egg, and vanilla until combined.
- Add the dry ingredients to the banana mixture and stir just until no dry flour remains. Do not overmix.
- Fold in the chocolate chunks, reserving a few for the muffin tops if desired.
- Divide the batter among the muffin cups, filling each about three-quarters full. Sprinkle the reserved chocolate chunks over the tops.
- Bake for 18 to 22 minutes, until the tops spring back lightly and a toothpick inserted into the muffin, away from a chocolate piece, comes out with a few moist crumbs.
- Cool the muffins in the pan for about 5 minutes, then transfer them to a wire rack.
Notes
Use heavily speckled or nearly overripe bananas for the best sweetness and moisture. Avoid overmixing after adding the flour. Store cooled muffins in an airtight container and enjoy within a few days, or freeze them for longer storage.
