  • 2 cups All-purpose flour
  • 1 cup Quick-cooking oats
  • 1/2 cup Packed light brown sugar
  • 1 tablespoon Baking powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Ground cinnamon
  • 1 Large egg
  • 1 1/4 cups Milk
  • 1/3 cup Vegetable oil
  • 1 cup Peeled, finely chopped apple
Glaze
  • 1 cup Confectioners’ sugar
  • 1 1/2 to 2 tablespoons Milk
  • 1/4 teaspoon Ground cinnamon
  • Small pinch Salt, optional

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C) and grease a 9 x 5-inch loaf pan.
  2. In a large bowl, whisk together the flour, quick-cooking oats, brown sugar, baking powder, salt, and cinnamon.
  3. In a second bowl, whisk the egg, milk, and vegetable oil until combined.
  4. Add the wet mixture to the dry ingredients and stir only until the flour is moistened. The batter should remain slightly lumpy.
  5. Fold in the peeled, finely chopped apple without overmixing.
  6. Transfer the batter to the prepared pan and smooth the top.
  7. Bake for 55–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. The internal temperature should be approximately 200–205°F (93–96°C).
  8. Cool the loaf in the pan for about 10 minutes, then remove it to a wire rack and cool substantially before glazing.
  9. Whisk the confectioners’ sugar, cinnamon, milk, and optional pinch of salt until smooth. Drizzle the glaze over the cooled loaf before slicing.

Notes

Use a firm, lightly tart apple such as Granny Smith, Honeycrisp, or Braeburn. Chop it fairly small so it softens during baking without adding excessive moisture. Avoid overmixing, and check the loaf near the 55-minute mark because apples and loaf-pan materials can affect baking time.
