  • 8 cups Low-sodium chicken broth or stock
  • 1 1/2 pounds Boneless, skinless chicken thighs
  • 1 tablespoon Soy sauce or tamari
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Freshly ground black pepper
Finishing Ingredients
  • 2 tablespoons Fresh lemon or lime juice
  • 2 scallions Scallions, thinly sliced
  • 1/4 cup Fresh cilantro, chopped
Optional Additions
  • 1/2 cup Uncooked jasmine or white rice
  • 2 cups Baby spinach or chopped kale
  • 1/2 teaspoon Ground turmeric
  • To taste Red-pepper flakes or sliced fresh chile

Method
 

Step-by-Step
  1. Heat the oil in a large Dutch oven or soup pot over medium heat. Add the onion, carrots, and celery, then cook for 5–7 minutes, stirring occasionally, until the vegetables begin to soften.
  2. Add the minced garlic and freshly grated ginger. Cook for 30–60 seconds, stirring constantly, just until fragrant; do not let either ingredient brown.
  3. Pour in the chicken broth and add the soy sauce, kosher salt, and black pepper. Bring the liquid to a gentle simmer.
  4. Add the chicken thighs, partially cover the pot, and simmer gently for approximately 15–20 minutes, until the chicken reaches 165°F (74°C) internally.
  5. Transfer the chicken to a plate and shred it with two forks. Return the shredded chicken to the pot.
  6. If using rice, add it with the broth and simmer until tender, usually 15–20 minutes depending on the variety. Add spinach or kale during the final 2–3 minutes.
  7. Stir in the lemon or lime juice, taste, and adjust the salt, pepper, soy sauce, and ginger. Serve with scallions and cilantro, plus chile or red-pepper flakes if desired.

Notes

Use fresh ginger for the cleanest flavor, and keep the soup at a gentle simmer rather than a rapid boil. Refrigerate leftovers in a covered container and reheat gently on the stovetop; add a splash of broth if rice thickens the soup.
