Step-by-Step
- Combine the breadcrumbs and milk in a large bowl and let them stand for 5 minutes, until softened.
- Add the ground beef, ground pork, eggs, Parmesan, onion, four minced garlic cloves, parsley, salt, pepper, dried seasoning, and optional red-pepper flakes. Mix gently with your hands just until evenly combined.
- Divide the mixture into 6 equal portions and shape each portion into a round meatball weighing approximately 5 to 6 ounces. Chill for 20 to 30 minutes if possible.
- Heat 2 tablespoons olive oil in a large ovenproof skillet or Dutch oven. Brown the meatballs on several sides for 8 to 12 minutes total, working in batches if necessary.
- Remove excess fat if needed. Add the sauce olive oil and the remaining garlic briefly, then stir in the crushed tomatoes, salt, oregano, and optional red-pepper flakes.
- Return the meatballs to the sauce, cover, and bake at 400°F (200°C) for 20 to 30 minutes, until the centers reach 160°F (71°C).
- Rest the meatballs for 5 minutes before serving. Finish with chopped basil or parsley and additional Parmesan.
Notes
Soaking the breadcrumbs in milk creates a panade that keeps these very large meatballs moist. Mix gently and do not knead the meat. Refrigerate leftovers in sauce and reheat gently until hot.
