- Heat the oven to 400°F (200°C) and lightly oil a large rimmed baking sheet.
- Peel or scrub the sweet potatoes, then cut them into evenly sized 1-inch cubes.
- Toss the sweet potatoes with olive oil, minced garlic, Italian seasoning, kosher salt, and black pepper.
- Arrange the cubes in a single spaced-out layer on the prepared baking sheet.
- Roast for 25 to 30 minutes, turning once, until browned outside and fork-tender.
- Sprinkle the Parmesan over the roasted sweet potatoes and return the pan to the oven for 2 to 3 minutes, until the cheese is melted and lightly browned.
- Garnish with chopped fresh parsley and serve hot.
Notes
Use two baking sheets if needed so the sweet potatoes remain in a single layer with space between pieces. Add Parmesan near the end because it can burn if roasted for the entire cooking time. Store leftovers covered in the refrigerator and reheat until hot.
