Garlic Parmesan Butter Roasted Potatoes

Baby potatoes are tossed with garlic butter and Italian seasoning, roasted until golden, then finished with freshly grated Parmesan and parsley. It is a simple, richly flavored dinner side dish for 4–6 people.

  • 3 pounds Baby Yukon Gold, red, or mixed baby potatoes
  • 4 tablespoons Unsalted butter, melted
  • 4-5 cloves Garlic, finely minced
  • 1/2 cup Freshly grated Parmesan cheese
Seasonings
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Freshly ground black pepper
Finishing
  • 2 tablespoons Fresh parsley, chopped
Optional
  • 1/4 teaspoon Red pepper flakes

Method
 

Step-by-Step
  1. Heat the oven to 425°F and lightly grease a large rimmed baking sheet or line it with parchment.
  2. Scrub the potatoes and cut larger ones in half or quarters so every piece is approximately 1 to 1 1/2 inches thick.
  3. In a large bowl, stir together the melted butter, minced garlic, Italian seasoning, kosher salt, black pepper, and optional red pepper flakes.
  4. Add the potatoes and toss thoroughly until every piece is coated with the seasoned garlic butter.
  5. Arrange the potatoes in a single layer on the prepared baking sheet, preferably with cut sides facing down, leaving space between pieces.
  6. Roast for 30–35 minutes, turning the potatoes once halfway through, until fork-tender and deeply golden.
  7. Sprinkle the Parmesan over the roasted potatoes and return the pan to the oven for 3–5 minutes, until the cheese melts and lightly browns.
  8. Scatter chopped fresh parsley over the hot potatoes and serve immediately.

Notes

Freshly grated Parmesan melts and browns more evenly than pre-shredded cheese. Keep the potatoes spaced apart so they roast instead of steam. Store leftovers in the refrigerator and reheat in a hot oven or air fryer until warmed and crisp.
