Step-by-Step
- Heat the oven to 425°F and lightly grease a large rimmed baking sheet or line it with parchment.
- Scrub the potatoes and cut larger ones in half or quarters so every piece is approximately 1 to 1 1/2 inches thick.
- In a large bowl, stir together the melted butter, minced garlic, Italian seasoning, kosher salt, black pepper, and optional red pepper flakes.
- Add the potatoes and toss thoroughly until every piece is coated with the seasoned garlic butter.
- Arrange the potatoes in a single layer on the prepared baking sheet, preferably with cut sides facing down, leaving space between pieces.
- Roast for 30–35 minutes, turning the potatoes once halfway through, until fork-tender and deeply golden.
- Sprinkle the Parmesan over the roasted potatoes and return the pan to the oven for 3–5 minutes, until the cheese melts and lightly browns.
- Scatter chopped fresh parsley over the hot potatoes and serve immediately.
Notes
Freshly grated Parmesan melts and browns more evenly than pre-shredded cheese. Keep the potatoes spaced apart so they roast instead of steam. Store leftovers in the refrigerator and reheat in a hot oven or air fryer until warmed and crisp.
