Garlic Herb Butter
  • 4 tablespoons Unsalted butter, softened
  • 2 cloves Garlic, finely minced
  • 1 tablespoon Fresh parsley, finely chopped
  • 1 teaspoon Fresh thyme leaves
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Freshly ground black pepper
Optional Topping
  • 1 tablespoon Grated Parmesan
For Serving

Method
 

Step-by-Step
  1. Heat the oven to 425°F (220°C) and line a baking sheet with foil or parchment.
  2. In a small bowl, mix the softened butter, minced garlic, parsley, thyme, kosher salt, black pepper, and Parmesan if using.
  3. Coat each ear of corn thoroughly with the garlic herb butter, covering the kernels from end to end.
  4. Wrap each ear individually in foil, or arrange the buttered corn uncovered on the prepared baking sheet.
  5. Roast for 20–25 minutes, turning the ears once halfway through cooking. For lightly browned kernels, open the foil during the last 5 minutes or broil briefly.
  6. Serve the corn hot with any remaining garlic herb butter and optional lemon wedges.

Notes

Use softened rather than melted butter so it clings to the corn. Foil-wrapped corn stays especially moist, while uncovered corn develops more browning and roasted flavor. Rotate the ears once for even cooking.
