Ingredients
  

Steak and Zucchini
  • 1 1/2 pounds Sirloin steak, cut into 1-inch cubes
  • 4 medium zucchini Medium zucchini, spiralized into noodles
Sauce and Seasoning
  • 1 tablespoon Olive oil
  • 3 tablespoons Unsalted butter, divided
  • 5 cloves Garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/4 cup Beef stock or low-sodium beef broth
  • Juice of 1/2 lemon Fresh lemon juice
  • 1 tablespoon Fresh parsley, chopped
  • 1/4 teaspoon Crushed red pepper flakes, optional
  • 1 teaspoon Kosher salt, divided, or to taste
  • 1/2 teaspoon Freshly ground black pepper, divided, or to taste

Method
 

Step-by-Step
  1. Pat the steak cubes dry and season with approximately 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper.
  2. Heat olive oil in a large skillet over medium-high to high heat. Sear the steak in a single layer for about 2–3 minutes per side, working in batches if needed, then transfer it to a plate.
  3. Reduce the heat to medium and add 2 tablespoons butter, garlic, Italian seasoning, and optional red pepper flakes. Cook for 30–60 seconds, just until fragrant.
  4. Pour in the beef stock and lemon juice, scraping the browned bits from the skillet. Simmer for about 1 minute.
  5. Add the spiralized zucchini and toss with the sauce for 2–3 minutes, until just tender but still slightly crisp.
  6. Return the steak to the skillet and toss with the remaining 1 tablespoon butter. Taste and adjust salt, pepper, or lemon juice.
  7. Garnish with chopped parsley and serve immediately.

Notes

Dry the steak thoroughly and avoid crowding the skillet for better browning. Cook zucchini noodles only until barely tender because they release water quickly. Sirloin, strip steak, or rib eye work well; avoid cooking the steak beyond medium unless preferred.
