- Trim excess fat from the sirloin and cut it into evenly sized 1-inch cubes. Pat the steak very dry with paper towels, then season with kosher salt and black pepper.
- Heat the olive oil in a large heavy skillet, preferably cast iron, over medium-high to high heat. When the oil is hot, add the steak in a single layer.
- Cook the steak for about 2 minutes without moving it so a browned crust can form. Turn the pieces and cook for another 2–4 minutes, depending on the desired doneness, working in batches if needed.
- Reduce the heat to medium-low and add the butter and minced garlic. Toss the steak continuously for 1–2 minutes, until the butter melts and the garlic smells fragrant without browning or burning.
- Remove the skillet from the heat and sprinkle the steak bites with chopped parsley. Add red-pepper flakes if desired, then serve immediately with toothpicks, crusty bread, or dipping sauce.
Notes
For medium-rare steak bites, remove them at approximately 125–130°F (52–54°C); the temperature will rise slightly while resting. For medium, cook to approximately 135–140°F (57–60°C). Dry steak and a hot pan are essential for browning, and garlic should be added after searing to help prevent burning.
