  • 1 lb (450 g) Boneless sirloin steak, trimmed and cut into 1-inch cubes
  • 1 tablespoon Olive oil
  • 2 tablespoons Unsalted butter
  • 3-4 cloves Garlic, finely minced
  • 1 teaspoon, or to taste Kosher salt
  • 1/2 teaspoon Black pepper
Garnish
  • 1-2 tablespoons Fresh parsley, chopped
Optional
  • 1/4 teaspoon Red-pepper flakes

Method
 

Step-by-Step
  1. Trim excess fat from the sirloin and cut it into evenly sized 1-inch cubes. Pat the steak very dry with paper towels, then season with kosher salt and black pepper.
  2. Heat the olive oil in a large heavy skillet, preferably cast iron, over medium-high to high heat. When the oil is hot, add the steak in a single layer.
  3. Cook the steak for about 2 minutes without moving it so a browned crust can form. Turn the pieces and cook for another 2–4 minutes, depending on the desired doneness, working in batches if needed.
  4. Reduce the heat to medium-low and add the butter and minced garlic. Toss the steak continuously for 1–2 minutes, until the butter melts and the garlic smells fragrant without browning or burning.
  5. Remove the skillet from the heat and sprinkle the steak bites with chopped parsley. Add red-pepper flakes if desired, then serve immediately with toothpicks, crusty bread, or dipping sauce.

Notes

For medium-rare steak bites, remove them at approximately 125–130°F (52–54°C); the temperature will rise slightly while resting. For medium, cook to approximately 135–140°F (57–60°C). Dry steak and a hot pan are essential for browning, and garlic should be added after searing to help prevent burning.
