- Pat the chicken dry, then season it with Italian seasoning, paprika, salt, and black pepper.
- Heat olive oil in a large, heavy skillet over medium-high heat. Add the chicken and sear until browned and cooked through, about 5–6 minutes per side for larger pieces, or until the thickest piece reaches 165°F (74°C). Transfer the chicken to a plate.
- Reduce the heat to medium. Add 2 tablespoons butter and the quartered baby potatoes, then cook for about 8–10 minutes, turning occasionally until browned.
- Add the minced garlic and cook for about 1 minute, just until fragrant.
- Pour in the chicken broth and scrape up the browned bits from the skillet. Cover and simmer for 8–10 minutes, or until the potatoes are fork-tender.
- Return the chicken to the skillet. Add the remaining 1 tablespoon butter and toss everything together, cooking for another 2–3 minutes to reheat and coat the chicken.
- Finish with lemon juice and chopped parsley. Taste and adjust salt and pepper before serving.
Notes
Cut the potatoes into similarly sized quarters for even cooking. If the skillet is crowded, sear the chicken in batches for better browning. Very large baby potatoes may need extra simmering time. Refrigerate leftovers promptly and reheat gently until hot.
