Garlic Butter Chicken and Potato Skillet

Juicy chicken thighs and golden baby potatoes are cooked in stages, then finished in a fragrant garlic-butter broth sauce. This hearty one-pan dinner serves four and is ready in about 40–45 minutes.

  • pounds Baby potatoes, halved or quartered
  • 1 tablespoon Olive oil
  • 3 tablespoons Unsalted butter, divided
  • 5 cloves Garlic cloves, minced
Seasonings
  • 1 teaspoon Paprika
  • 1 teaspoon Italian seasoning
  • ½ teaspoon Onion powder
  • ½ teaspoon Fine salt, plus more for the potatoes
  • ¼ teaspoon Freshly ground black pepper
Sauce and Garnish
  • ½ cup Low-sodium chicken broth
  • 1 tablespoon Fresh parsley, chopped
  • As needed for serving Lemon wedges

Method
 

Step-by-Step
  1. Scrub the baby potatoes and halve them, quartering any larger potatoes. For the most even timing, parboil them in salted water for about 8 minutes, then drain very well.
  2. Toss the chicken pieces with paprika, Italian seasoning, onion powder, salt, and black pepper until evenly coated.
  3. Heat a large heavy skillet over medium-high heat. Add the olive oil and 1 tablespoon of butter, then cook the potatoes cut-side down for 8–10 minutes, turning occasionally, until browned and nearly tender; transfer them to a plate.
  4. Add another tablespoon of butter to the skillet. Arrange the seasoned chicken in a single layer and cook for 5–7 minutes, turning occasionally, until browned and cooked through to 165°F (74°C); transfer it to the plate if the pan becomes crowded.
  5. Reduce the heat to medium and add the remaining tablespoon of butter with the minced garlic. Cook for 30–60 seconds, stirring often, just until fragrant and not dark brown.
  6. Return the chicken and potatoes to the skillet and pour in the chicken broth. Scrape up the browned bits from the bottom, then simmer for 3–5 minutes until the broth reduces slightly and the potatoes are completely tender.
  7. Finish with chopped parsley and serve hot with optional lemon wedges. Spoon the garlic-butter sauce over each portion before serving.

Notes

Boneless chicken thighs are especially juicy, but diced chicken breast may be used if it is not overcooked. A cast-iron or other heavy-bottomed skillet gives the best browning. If skipping the potato parboil, cover the skillet after adding the broth and cook for approximately 15–20 minutes, turning the potatoes occasionally.
