- Heat the oven to 375°F (190°C). Grease a 12-cup muffin pan or line it with paper liners.
- In a large bowl, whisk together the whole-wheat flour, oats, wheat germ, brown sugar, baking powder, baking soda, cinnamon, and salt.
- Stir the grated carrot, lightly squeezed grated zucchini, raisins, and sunflower seeds into the dry mixture.
- In another bowl, whisk together the eggs, milk, oil, and vanilla extract.
- Pour the wet mixture into the dry ingredients and stir only until the flour is moistened. The batter should remain somewhat lumpy.
- Divide the batter evenly among the muffin cups, filling each about three-quarters full.
- Bake for 20–25 minutes, until the tops spring back lightly and a toothpick inserted in the center comes out clean.
- Cool the muffins in the pan for about 5 minutes, then transfer them to a rack to finish cooling.
Notes
Lightly squeeze excess moisture from the grated zucchini before mixing it in. Avoid overmixing. To freeze, cool completely, wrap muffins individually, and freeze for up to about 3 months; thaw overnight or warm briefly before serving.
