Fuel-to-Go Muffins

Hearty whole-wheat muffins packed with oats, wheat germ, grated vegetables, raisins, and sunflower seeds. They are lightly sweet, warmly spiced, and freezer-friendly for convenient breakfasts.

Ingredients
  

Dry Ingredients
  • 1 1/2 cups (about 180 g) Whole-wheat flour
  • 1 cup (about 90 g) Quick-cooking or rolled oats
  • 1/2 cup (about 55 g) Wheat germ
  • 1/2 cup (100 g) Packed brown sugar
  • 1 tablespoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 1/2 teaspoon Salt
Mix-Ins
  • 1 cup Finely grated carrot
  • 1 cup Finely grated zucchini
  • 1/2 cup Raisins
  • 1/2 cup Sunflower seeds
Wet Ingredients
  • 2 Large eggs
  • 1 cup (240 mL) Milk
  • 1/2 cup (120 mL) Canola or other neutral vegetable oil
  • 1 teaspoon Vanilla extract

Method
 

Step-by-Step
  1. Heat the oven to 375°F (190°C). Grease a 12-cup muffin pan or line it with paper liners.
  2. In a large bowl, whisk together the whole-wheat flour, oats, wheat germ, brown sugar, baking powder, baking soda, cinnamon, and salt.
  3. Stir the grated carrot, lightly squeezed grated zucchini, raisins, and sunflower seeds into the dry mixture.
  4. In another bowl, whisk together the eggs, milk, oil, and vanilla extract.
  5. Pour the wet mixture into the dry ingredients and stir only until the flour is moistened. The batter should remain somewhat lumpy.
  6. Divide the batter evenly among the muffin cups, filling each about three-quarters full.
  7. Bake for 20–25 minutes, until the tops spring back lightly and a toothpick inserted in the center comes out clean.
  8. Cool the muffins in the pan for about 5 minutes, then transfer them to a rack to finish cooling.

Notes

Lightly squeeze excess moisture from the grated zucchini before mixing it in. Avoid overmixing. To freeze, cool completely, wrap muffins individually, and freeze for up to about 3 months; thaw overnight or warm briefly before serving.
