- Place the finely chopped chocolate in a heatproof bowl. Heat the heavy cream in a small saucepan over medium heat until steaming and just beginning to simmer, but do not let it boil vigorously.
- Pour the hot cream over the chocolate and let it stand for 2 to 3 minutes. Stir slowly from the center outward until the chocolate is fully melted and smooth.
- Stir in the butter, vanilla extract, and salt until the ganache is glossy and completely combined. Cover the bowl and refrigerate for 1 to 2 hours, or until firm enough to scoop.
- Use a small cookie scoop or teaspoon to portion the chilled ganache. Roll each portion between your palms to form round truffles, then coat them in cocoa powder or another desired topping.
- Refrigerate the finished truffles until firm. Let them stand at room temperature for several minutes before serving for the best texture.
Notes
Chop the chocolate finely and evenly for easy melting. If pieces remain, set the bowl over barely simmering water or microwave it in short 10-second intervals. Store the truffles airtight in the refrigerator for up to 1 week and bring them briefly to room temperature before serving.
