  • 1 cup cooked quinoa, chilled or at room temperature
  • 1/2 cup plain Greek yogurt
Fresh Fruit
  • 1/2 cup blueberries
  • 1/2 cup sliced strawberries
  • 1/2 banana banana, sliced
Toppings
  • 2 tablespoons granola
  • 1 tablespoon chia seeds
  • 1 tablespoon honey
Optional Topping
  • 1 tablespoon chopped almonds or walnuts

Method
 

Step-by-Step
  1. Spoon 1 cup of chilled or room-temperature cooked quinoa into a breakfast bowl.
  2. Add the plain Greek yogurt, then arrange the blueberries, sliced strawberries, and banana over the quinoa and yogurt.
  3. Sprinkle the granola and chia seeds evenly over the top.
  4. Drizzle with honey and add the chopped almonds or walnuts if using.
  5. Serve immediately while the granola is crisp and the fruit is fresh.

Notes

Cool quinoa completely before assembling so it does not thin the yogurt or soften the granola. Add the granola and honey just before serving. Raspberries, blackberries, mango, or diced apple can replace the listed fruit; rolled oats, muesli, or toasted nuts can replace granola. For a dairy-free or vegan version, use dairy-free yogurt and maple syrup or agave.
