Frozen Coconut Lemonade

A cool, creamy, blended frozen drink made with chilled lemonade, full-fat coconut milk, ice, and optional sugar. This easy no-cook recipe makes about four refreshing servings in roughly 10 minutes.

  • 2 cups Prepared lemonade, chilled
  • 1 13.5–14-ounce can Full-fat unsweetened canned coconut milk, well shaken
  • 4 cups Ice
Sweetener and Flavor
  • 2–4 tablespoons Granulated sugar, to taste
  • 1 tablespoon Fresh lemon juice, optional
Garnishes
  • As needed Lemon slices, optional
  • As needed Toasted coconut, optional

Method
 

Step-by-Step
  1. Chill the lemonade thoroughly. Shake the can of full-fat coconut milk very well so the thick coconut cream and liquid are fully combined.
  2. Add the chilled lemonade, shaken coconut milk, ice, sugar, and optional fresh lemon juice to a high-powered blender.
  3. Blend on high until the drink is smooth, thick, and slushy. Stop once or twice to scrape down the sides if needed.
  4. Taste the mixture and adjust it with more sugar for sweetness, more lemon juice for acidity, or a small splash of lemonade if it is too thick.
  5. Pour immediately into chilled glasses. Garnish with lemon slices or toasted coconut and serve right away.

Notes

Use full-fat canned coconut milk rather than refrigerated carton coconut beverage for the creamiest texture. For a stronger lemon flavor without diluting the drink, freeze some lemonade in ice-cube trays and blend those cubes with the remaining ingredients. The drink is best served immediately because it separates and loses its frozen texture as it stands.
