- Rinse the blueberries and dry them thoroughly. In a bowl, stir together the Greek yogurt, honey or maple syrup, vanilla extract, and optional pinch of salt.
- Line a baking sheet with parchment paper or prepare a silicone mini-muffin mold. Dip each blueberry into the yogurt mixture, or stir the berries into the yogurt and spoon small clusters onto the prepared surface.
- Sprinkle the bites with optional chopped nuts, granola, or shredded coconut. Freeze for 2–3 hours, or until firm.
- Transfer the frozen bites to an airtight freezer container or freezer bag after they have frozen in a single layer. Let each bite stand at room temperature for 2–5 minutes before eating for a softer texture.
Notes
Use thick Greek yogurt for better coating and less icy texture. Freeze the bites in a single layer before packaging so they do not stick together. For a more dessert-like version, drizzle or dip the frozen bites in melted white or dark chocolate after freezing.
