Frozen Blueberry Bites

Fresh blueberries are coated in lightly sweetened vanilla Greek yogurt and frozen into refreshing bite-size treats. Add nuts, granola, coconut, or chocolate for extra flavor and crunch.

  • 1 1/2 cups Fresh blueberries
  • 1 cup Plain Greek yogurt, preferably full-fat or 2%
  • 2 tablespoons Honey or pure maple syrup
  • 1/2 teaspoon Vanilla extract
Optional Ingredients
  • 1 pinch Salt
  • 2 tablespoons Finely chopped nuts, granola, or shredded coconut

Method
 

Step-by-Step
  1. Rinse the blueberries and dry them thoroughly. In a bowl, stir together the Greek yogurt, honey or maple syrup, vanilla extract, and optional pinch of salt.
  2. Line a baking sheet with parchment paper or prepare a silicone mini-muffin mold. Dip each blueberry into the yogurt mixture, or stir the berries into the yogurt and spoon small clusters onto the prepared surface.
  3. Sprinkle the bites with optional chopped nuts, granola, or shredded coconut. Freeze for 2–3 hours, or until firm.
  4. Transfer the frozen bites to an airtight freezer container or freezer bag after they have frozen in a single layer. Let each bite stand at room temperature for 2–5 minutes before eating for a softer texture.

Notes

Use thick Greek yogurt for better coating and less icy texture. Freeze the bites in a single layer before packaging so they do not stick together. For a more dessert-like version, drizzle or dip the frozen bites in melted white or dark chocolate after freezing.
