Fresh, Quick Garlic Hummus for Any Occasion

A creamy homemade hummus made with canned chickpeas, tahini, fresh lemon juice, garlic, and olive oil. It takes about 10 minutes to prepare and needs no cooking.

  • 1 15-ounce can (425 g) Chickpeas, drained and rinsed
  • 1/4 cup (60 g) Tahini
  • 1/4 cup (60 ml) Fresh lemon juice
  • 1-2 cloves Garlic cloves, peeled
  • 2 tablespoons, plus more for serving Extra-virgin olive oil
  • 1/2 teaspoon Ground cumin
  • 1/2 teaspoon, or to taste Fine salt
  • 2-4 tablespoons, as needed Ice-cold water
Optional Garnishes
  • As desired Paprika, chopped parsley, or whole chickpeas

Method
 

Step-by-Step
  1. Drain and rinse the chickpeas thoroughly. Reserve a little of the chickpea liquid if desired, then add the tahini, lemon juice, garlic, cumin, and salt to a food processor and blend for 30-60 seconds until smooth.
  2. Add the drained chickpeas and olive oil to the food processor. Process for 1-2 minutes, scraping down the bowl once or twice so the mixture becomes evenly blended.
  3. Add ice-cold water one tablespoon at a time while processing. Stop when the hummus is light, creamy, and spreadable, using only as much water as needed.
  4. Taste the hummus and adjust the salt, lemon juice, garlic, or cumin to suit your preference. Transfer it to a serving bowl, make a shallow swirl on top, and finish with olive oil and optional paprika, parsley, or whole chickpeas.

Notes

For milder garlic flavor, blend the garlic with the lemon juice and let it stand for 5-10 minutes before processing. Store covered in the refrigerator and use within 3-4 days.
