- Heat the oven to 375°F (190°C). Grease a 9 x 13-inch baking pan or line it with parchment paper, leaving some overhang for lifting the baked bars out later.
- Whisk together the flour, 1 cup granulated sugar, baking powder, salt, and optional cinnamon. Cut in the cold butter until coarse crumbs form, then mix in the egg until a crumbly dough comes together.
- Press about half of the crumb mixture firmly into the prepared pan to make an even bottom crust. Combine the peaches, 1/2 cup sugar, cornstarch, lemon juice, and optional cinnamon in a separate bowl.
- Let the peach mixture stand briefly, then spread it evenly over the crust. Sprinkle the remaining crumb dough over the fruit.
- Bake for 45–50 minutes, until the topping is lightly golden and the peach filling bubbles around the edges. Cool completely in the pan for at least one hour before cutting.
Notes
Use ripe but still firm peaches for the best texture. If the peaches are especially juicy, add about 1 additional teaspoon of cornstarch. Briefly chilling the cooled bars helps produce cleaner slices.
