  • 1 large mango, about 1 1/2 cups Large ripe mango, peeled and diced
  • 1/4 cup Red onion, finely diced
  • 1 small jalapeno Small jalapeno, seeded and minced
  • 1/4 cup Fresh cilantro, chopped
  • 1 lime, about 2 tablespoons juice Fresh lime juice
  • 1/4 teaspoon, or to taste Kosher salt

Method
 

Step-by-Step
  1. Rinse and dry the strawberries, hull them, and cut them into small, even pieces. Peel and dice the mango, then finely dice the red onion, mince the jalapeno, and chop the cilantro.
  2. Place the strawberries, mango, red onion, jalapeno, and cilantro in a medium mixing bowl. Add the lime juice and kosher salt.
  3. Fold the mixture gently with a spoon or rubber spatula until the ingredients are evenly combined without mashing the fruit. Taste and adjust the salt, lime juice, or jalapeno as desired.
  4. Serve immediately, or cover and refrigerate for 15 to 30 minutes to let the flavors blend. Serve with tortilla chips, grilled chicken, grilled fish, or tacos.

Notes

Choose ripe but still firm strawberries and mangoes so the salsa stays colorful and spoonable instead of watery. If preparing well in advance, add the lime juice shortly before serving for the freshest texture.
