Fresh and Easy Fruit Spring Rolls

Fresh Vietnamese rice-paper rolls filled with colorful sliced fruit and optional mint. Serve immediately with a simple honey-yogurt dipping sauce for a naturally sweet snack, breakfast, or dessert.

Ingredients
  

Fruit Spring Rolls
  • 8 wrappers Round rice-paper spring-roll wrappers, approximately 8–9 inches each
  • 1 mango Mango, peeled and cut into thin strips
  • 2 kiwifruit Kiwifruit, peeled and cut into thin strips
  • 1 cup Strawberries, hulled and thinly sliced
  • 1 cup Blueberries
  • 1 small banana Small banana, cut lengthwise into strips
  • 8–16 leaves Fresh mint leaves, optional
Optional Honey-Yogurt Dipping Sauce
  • 1/2 cup Plain Greek yogurt
  • 2 tablespoons Honey
  • 1 teaspoon Fresh lime juice

Method
 

Step-by-Step
  1. Wash all fruit and dry it thoroughly. Cut the mango, kiwifruit, strawberries, and banana into narrow, similarly sized pieces so the filling sits neatly inside each wrapper.
  2. If using the dipping sauce, stir the plain Greek yogurt, honey, and fresh lime juice together in a small bowl until smooth. Set it aside while assembling the rolls.
  3. Pour warm water into a shallow dish. Dip one rice-paper wrapper for about 5–10 seconds, just until pliable, because it will continue softening on the work surface.
  4. Lay the softened wrapper flat on a clean, slightly damp board or kitchen towel. Place a small line of mango, kiwi, strawberry, blueberries, banana, and optional mint across the lower third, leaving room around the edges.
  5. Fold the bottom edge over the fruit, fold in both sides, and roll firmly upward like a burrito. Repeat with the remaining wrappers and fruit, keeping finished rolls separated so they do not stick together.
  6. Serve the fruit spring rolls immediately with the honey-yogurt dipping sauce. Enjoy them while the rice paper is supple and the fruit is cool and juicy.

Notes

Keep the fruit fairly dry, avoid overfilling, and work with one wrapper at a time. The rolls are best served immediately because softened rice paper can stick to itself.
