- Rinse and dry the peaches. Cut around each pit, remove the pits, and finely dice the peaches into roughly 1/4-inch pieces, leaving the skins on unless you prefer them peeled.
- Finely dice the red onion and red bell pepper. Seed and mince the jalapeno; removing the seeds and inner ribs gives the salsa a milder heat.
- Add the peaches, onion, bell pepper, jalapeno, and chopped cilantro to a medium mixing bowl.
- Pour in the lime juice and sprinkle in the kosher salt. Add the lemon juice and sugar if the peaches are underripe or particularly tart.
- Stir gently until all ingredients are combined, taking care not to crush the peach pieces.
- Taste and adjust with more salt, lime juice, or jalapeno according to your preference.
- Cover and refrigerate for 20 to 30 minutes before serving so the flavors blend. Serve with tortilla chips or alongside grilled chicken, fish, pork, or tacos.
Notes
Use peaches that yield slightly to pressure but are not mushy. For a less watery salsa, dice the peaches shortly before mixing and drain excess liquid after chilling. Store leftovers in an airtight container in the refrigerator and use within about 2 days. Add extra cilantro or diced avocado just before serving if desired.
