- Whisk the flour, baking powder, salt, and granulated sugar together in a medium bowl until evenly combined.
- Mash the very ripe banana in a separate bowl until mostly smooth. Whisk in the egg, milk, melted butter, and vanilla extract.
- Pour the wet mixture into the dry ingredients and stir just until the flour disappears. A few small lumps are preferable, so avoid overmixing.
- Let the batter rest for 5 minutes. It should be thick but pourable; if it is excessively thick, stir in 1–2 tablespoons of additional milk.
- Heat a lightly buttered skillet or griddle over medium heat. Pour about 1/4 cup of batter onto the pan for each pancake.
- Cook for about 2–3 minutes, until bubbles appear on the surface and the edges look set. Flip and cook for another 1–2 minutes, until golden and cooked through.
- Serve the pancakes warm with butter, maple syrup, sliced banana, or toasted nuts.
Notes
Use a very ripe, heavily speckled banana for the strongest flavor and natural sweetness. Cook over medium heat because banana batter browns quickly. Do not press down on the pancakes after flipping, as this can make them less fluffy.
