Step-by-Step
  1. Cut the watermelon, cucumber, and red onion into small, fairly uniform pieces. Seed and finely mince the jalapeno, leaving some seeds if you prefer a hotter salsa.
  2. Combine the chopped watermelon, cucumber, red onion, cilantro, and jalapeno in a bowl. Add the lime juice and salt, then stir gently so the watermelon pieces stay intact.
  3. Cover and refrigerate until chilled, about 30 minutes to 1 hour if using the optional chill time. Serve with tortilla chips, draining any excess liquid first if the mixture seems watery.

Notes

For the best texture, prepare the salsa shortly before serving. Chopped watermelon and cucumber can release more juice during prolonged refrigeration, so drain excess liquid before serving if needed.
