- Cut the seedless watermelon into small, even dice and transfer it to a colander. Let it drain for a few minutes so excess juice runs off before the salsa is mixed.
- Add the drained watermelon, chopped red onion, seeded cucumber, minced jalapeno, and cilantro to a large mixing bowl.
- Stir in the lime juice, kosher salt, and optional black pepper. Toss gently until the ingredients are evenly distributed without crushing the watermelon.
- Cover the bowl and refrigerate the salsa for 30 minutes if time permits. This short rest allows the lime, cilantro, jalapeno, and onion flavors to blend.
- Stir the salsa once more before serving. Spoon it into a serving bowl and enjoy promptly with tortilla chips.
Notes
Uniform 1/4-inch dice gives each chip a balanced mix of ingredients. Remove all jalapeno seeds and membranes for less heat, or leave some membranes intact for more heat. Drain excess watermelon juice and serve soon after chilling because prolonged storage can make the salsa watery.
