- Peel, core, and slice the apples into fairly uniform wedges or slices about 1/4 inch thick.
- Melt the butter in a large skillet over medium heat. Add the apples and cook for about 5 minutes, stirring or turning occasionally, until they begin to soften.
- Sprinkle the sugar, cinnamon, nutmeg, and salt over the apples. Toss gently so the slices are coated without breaking.
- Continue cooking for 7 to 12 minutes, stirring periodically, until the apples are tender but not mushy and the butter, sugar, and apple juices become a glossy syrup.
- Add a tablespoon or two of water if the skillet becomes dry or the sugar begins to catch. Remove the apples from the heat while they are just tender and serve hot.
Notes
Use a wide skillet and avoid overcrowding so the apples can brown lightly rather than steam. Remove them while they are just tender because residual heat will continue softening them. Refrigerate leftovers in a covered container and reheat gently.
