Epic Iron Man Cupcakes

Ingredients
  

Chocolate Cupcakes
  • 1 cup (125 g) All-purpose flour
  • 1/2 cup (100 g) Granulated sugar
  • 1/3 cup (30 g) Unsweetened cocoa powder
  • 1/2 teaspoon Baking soda
  • 1/2 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1 Large egg
  • 1/2 cup (120 ml) Buttermilk
  • 1/4 cup (60 ml) Vegetable oil
  • 1 teaspoon Vanilla extract
  • 1/2 cup (120 ml) Hot water or hot coffee
Buttercream
  • 1 cup (225 g) Unsalted butter, softened
  • 4 cups (480 g) Powdered sugar, sifted
  • 2 teaspoons Vanilla extract
  • 2-4 tablespoons Heavy cream or milk
  • As needed Red gel food coloring
  • Optional, as needed Yellow or orange gel coloring
Iron Man Decorations
  • As needed Red fondant
  • As needed Yellow fondant
  • As needed Black fondant
  • Optional, as needed White fondant or white decorating icing

Method
 

Step-by-Step
  1. Heat the oven to 350°F (175°C) and line a 12-cup muffin pan with paper liners.
  2. Whisk the flour, sugar, cocoa powder, baking soda, baking powder, and salt together in a medium bowl.
  3. Add the egg, buttermilk, vegetable oil, and vanilla extract, then mix just until the ingredients are combined.
  4. Stir in the hot water or hot coffee. The batter will be thin, which is expected and helps produce moist chocolate cupcakes.
  5. Divide the batter among the liners, filling each about two-thirds full. Bake for 18–22 minutes, until the tops spring back and a toothpick comes out with a few moist crumbs.
  6. Cool the cupcakes in the pan for about 5 minutes, then transfer them to a rack and cool completely.
  7. Beat the softened butter until smooth. Gradually add the sifted powdered sugar, then beat in the vanilla and enough cream or milk to create a spreadable consistency.
  8. Tint the buttercream a strong Iron Man red with red gel food coloring. Pipe or spread a generous swirl onto each cooled cupcake.
  9. Roll out the red fondant and cut simple mask-shaped pieces. Add yellow fondant for the face panel, black fondant or edible marker for the outline and mouth, and white icing or fondant for the eyes.
  10. Place one finished fondant topper on each cupcake immediately before serving. If the masks were made ahead, keep them dry on parchment until decorating time.

Notes

Use gel food coloring rather than liquid coloring for vivid red buttercream without thinning it. Make fondant masks at least a day ahead so they can dry on parchment and hold their shape. For a shortcut, replace the scratch batter with one 15.25-ounce box of chocolate cake mix prepared with the eggs, oil, and water called for on the package.
