  • 4 medium tomatoes, about 1 1/2 lb total Medium ripe tomatoes, chopped or cut into wedges

  • 1/2 small onion Small red or yellow onion, thinly sliced
  • 2 tablespoons Fresh parsley or basil, chopped
Dressing
  • 2 tablespoons Red-wine vinegar or white vinegar
  • 1 tablespoon Extra-virgin olive oil
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Black pepper
  • 1/2 teaspoon Sugar or low-calorie sweetener, optional

Method
 

Step-by-Step
  1. Wash the tomatoes, cucumber, onion, and herbs. Chop the tomatoes or cut them into wedges, chop the cucumber, thinly slice the onion, and chop the parsley or basil.
  2. Place the tomatoes, cucumber, onion, and fresh herbs in a large mixing bowl. If the tomatoes are especially juicy, remove some seeds and watery pulp first to help keep the salad from becoming too thin.
  3. In a small bowl, whisk together the vinegar, olive oil, kosher salt, black pepper, and optional sugar or low-calorie sweetener until combined.
  4. Pour the dressing over the vegetables and toss gently until the tomatoes and cucumber are lightly coated. Serve immediately, or cover and refrigerate for 20 to 30 minutes, then toss once more before serving.

Notes

Use ripe but firm tomatoes for the best texture. Dress the salad shortly before serving, and avoid salting it too far in advance because salt draws moisture from tomatoes. The Weight Watchers Points value varies by plan and depends mainly on the olive oil and any sweetener used.
