  • 2 15-ounce cans Sliced peaches in juice or light syrup, undrained
  • 1 15-16 ounce box Sugar-free yellow cake mix
  • 1 12-fluid-ounce can Diet lemon-lime soda, such as Diet 7UP or Sprite Zero

  • 1/2 teaspoon Ground cinnamon

Step-by-Step
  1. Heat the oven to 350°F (175°C) and lightly spray a 9-by-13-inch baking dish with nonstick cooking spray.
  2. Pour both cans of undrained sliced peaches evenly into the prepared baking dish.
  3. Sprinkle the dry sugar-free yellow cake mix evenly over the peaches. Do not mix the cake mix into the fruit.
  4. Slowly pour the diet lemon-lime soda over the entire surface of the cake mix. Do not stir; use the back of a spoon to moisten any dry patches if needed.
  5. Sprinkle the cinnamon over the top, if using, then bake for 45–50 minutes, until the topping is golden and the peach juices are bubbling.
  6. Let the cobbler rest for 10–15 minutes before serving so the juices can thicken and the topping can set slightly.

Notes

Do not stir after adding the soda, because keeping the layers separate helps create a cobbler topping instead of a gummy texture.
