Easy Weight Watchers Peach Cobbler

A quick peach cobbler made with dry yellow cake mix, peaches in light syrup or juice, and diet lemon-lime soda. This easy dessert serves about 12 and requires no mixing bowl.

  • 1 box, approximately 15.25 ounces Dry yellow cake mix
  • 2 15-ounce cans Sliced peaches in light syrup or juice, undrained
  • 1 12-fluid-ounce can Diet lemon-lime soda, such as Sprite Zero or Diet 7UP
Optional
  • 1/2 teaspoon Ground cinnamon

Method
 

Step-by-Step
  1. Heat the oven to 350°F and lightly spray a 9 x 13-inch baking dish with nonstick cooking spray.
  2. Pour both cans of undrained peaches evenly into the prepared baking dish, making sure the fruit and its liquid cover the bottom.
  3. Sprinkle the dry yellow cake mix evenly over the peaches. Do not prepare the cake mix according to the package directions.
  4. Slowly pour the diet lemon-lime soda over the cake mix, covering as much of the surface as possible. Do not stir the layers together.
  5. Sprinkle the cinnamon over the top if using, then bake for 45 to 50 minutes, until the topping is golden brown and the peach filling is bubbling.
  6. Let the cobbler stand for about 10 minutes before serving so the fruit juices can settle slightly and the topping can firm up.

Notes

Use peaches packed in juice or light syrup and include the liquid. Peaches packed in heavy syrup make a considerably sweeter cobbler and may result in higher Points. Weight Watchers Points depend on the exact cake mix, peaches, soda, serving count, and current WW system, so check current labels and calculate according to your plan.
