Easy Weight Watchers Italian Chicken

Tender chicken breasts slow-cooked in a creamy sauce made with Italian dressing seasoning, reduced-fat cream of chicken soup, and light or fat-free cream cheese. Serve the chicken whole or shredded with vegetables, rice, noodles, or potatoes.

  • 4 breasts, about 1 1/2-2 lb total Boneless, skinless chicken breast halves
  • 1 packet, about 0.7 oz Dry Italian salad-dressing seasoning mix
  • 1 can, 10.5-10.75 oz 98%-fat-free or reduced-fat cream of chicken soup
  • 1 package, 8 oz, cut into cubes Reduced-fat or fat-free cream cheese

  • 1/4-1/2 cup, as needed Low-sodium chicken broth or water

Method
 

Step-by-Step
  1. Trim the chicken breasts and gently pound any very thick pieces to an even thickness. Place the chicken in the bottom of the slow cooker.
  2. Whisk together the cream of chicken soup, dry Italian seasoning mix, and 1/4 cup of low-sodium chicken broth or water if the mixture is especially thick. Add a little more liquid, up to 1/2 cup total, only if needed.
  3. Pour the soup mixture over the chicken, spreading it into an even layer. Cover the slow cooker and cook on LOW for 4 to 6 hours or on HIGH for about 2 to 3 hours.
  4. During the final 30 to 60 minutes, add the cubed cream cheese over the chicken and sauce. Cover and continue cooking until the cream cheese is soft enough to stir.
  5. Stir the sauce until smooth and creamy, then check the thickest chicken breast with an instant-read thermometer. The chicken is ready when it reaches 165°F.
  6. Serve the chicken breasts whole with plenty of sauce, or shred the chicken directly in the slow cooker and stir it into the creamy mixture. Spoon over steamed vegetables, rice, noodles, or mashed potatoes.

Notes

Use softened, cubed cream cheese and add it near the end to help prevent a grainy or separated sauce. Choose low-sodium soup or broth because the Italian dressing seasoning mix already contains salt. Refrigerate leftovers promptly and reheat gently with a splash of broth or water if the sauce thickens.
