Step-by-Step
- Place the chicken breasts in a slow cooker and sprinkle the reduced-sodium taco seasoning evenly over both sides. Pour about 3/4 cup of the chunky salsa over the chicken, reserving the remaining 1/4 cup for later.
- Cover the slow cooker and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until the chicken is tender and reaches an internal temperature of 165°F (74°C). Avoid adding extra water unless the salsa is unusually thick.
- Transfer the cooked chicken to a bowl and shred it with two forks. Return the shredded chicken to the slow cooker, stir it into the cooking juices and remaining salsa, and let it sit for 5-10 minutes so it absorbs the flavor and stays moist.
- Warm the corn tortillas briefly in a dry skillet, microwave, or oven until flexible. Divide the chicken among the eight tortillas, adding lettuce, tomato, onion, cilantro, lime, measured cheese, or plain nonfat Greek yogurt as desired.
Notes
Do not add extra water unless the salsa is unusually thick because the chicken releases liquid as it cooks. For a quicker stovetop method, simmer 1 lb of thinly sliced chicken breast with the seasoning and salsa in a covered skillet for approximately 12-15 minutes, turning once, until it reaches 165°F; shred or chop before serving.
