- Heat the oven to 350°F (175°C). Line a muffin pan with paper liners or lightly coat it with nonstick cooking spray.
- Place the apple pie filling in a large bowl. Roughly chop the apple pieces with kitchen scissors, a knife, or a pastry cutter so the batter will portion more evenly.
- Add the dry spice cake mix to the chopped pie filling and stir just until no dry cake mix remains. Do not overmix, since excessive stirring can make the muffins dense.
- Divide the batter among 18 muffin cups, filling each cup about two-thirds to three-quarters full. Add 1 to 2 tablespoons of water only if the batter is unusually stiff.
- Bake for 18 to 22 minutes, checking at the 18-minute mark. The tops should spring back lightly, and a toothpick inserted into the cake portion should come out clean.
- Cool the muffins in the pan for approximately 5 minutes. Transfer them to a wire rack and let them cool further before serving.
Notes
